Bunnahabhain has always been the gentle contrarian of Islay. While its neighbours trade in smoke and brimstone, this distillery at the northern tip of the island — where the Sound of Islay narrows and the Paps of Jura loom across the water — has long favoured a lighter, more nuanced approach. That said, an independent bottler's single cask at 55.9% ABV is a different proposition entirely from the standard range. North Star's Series 25 selections have been consistently strong, and this Bunnahabhain is no exception. It's the kind of bottle that justifies the independent bottling scene — a chance to taste a distillery's character through a different lens, at full strength, without the smoothing hand of vatting or chill filtration. A score of 7.8 feels right: this is a genuinely good whisky that delivers on its promise without overreaching. It's not trying to be the most complex Islay you've ever tasted. It's trying to be honest, and it succeeds.

Pour this neat in a Glencairn, let it breathe for five minutes, then add water drop by drop until it opens to your liking.
