New Zealand is not a country most whisky drinkers instinctively reach for when browsing the single malt shelf, and that is precisely what makes The Falcon from Cardrona so interesting. This is a whisky that arrives without the safety net of a Scottish postcode or a Japanese pedigree — it has to earn your attention on its own terms, and I think it does exactly that.

Cardrona operates out of the South Island, in the shadow of the Crown Range, and while I won't pretend to know every detail of their production process, the results in the glass speak with real confidence. The Falcon is bottled at a muscular 52% ABV with no age statement, which at this price point — £174 — signals that the distillery is asking you to judge the liquid, not the number on the label.
