Nikka's Yoichi distillery has long held a particular fascination for me. Among Japanese single malts, Yoichi stands apart — it is one of the few distilleries in Japan that still employs direct coal-fired pot stills, a method that imparts a muscular, almost brooding character to the spirit. So when the Discovery Series 2021 arrived with a non-peated expression at 47% ABV, I was genuinely curious. Yoichi without peat is like hearing a familiar voice sing an unfamiliar song. The bones are the same, but the melody shifts.

This is a no-age-statement release, which in Nikka's hands tends to mean a vatting selected for character rather than calendar. The Discovery Series has consistently been about showcasing a specific facet of the distillery's output, and here the intention is clear: strip away the smoke and let Yoichi's distillate speak on its own terms. At 47%, it sits comfortably above the standard 43% bottlings — enough strength to carry weight without demanding water, though it certainly rewards a drop.

What to Expect

Without tasting notes provided, I'll speak to what I know of this expression from my own glass. Yoichi's coal-fired stills produce a spirit with notable density and a certain oiliness that you simply do not get from steam-heated operations. Remove the peat influence and you are left with the raw architecture of the distillate — the fruit, the malt, the subtle metallic minerality that is Yoichi's quiet signature. Expect this to lean towards orchard fruit and cereal sweetness, with a savoury backbone that keeps things grounded. It is not a delicate whisky. Even without smoke, Yoichi has shoulders.

The non-peated angle makes this an interesting study piece. If you have only ever known Yoichi through its standard expressions or the heavier peated releases, this strips the equation back and asks you to appreciate what the distillery does before the malt bill adds its influence. I found it revealing — and rather good.

The Verdict

At £235, this is not an everyday purchase, and the NAS designation will give some buyers pause. That is fair. But the Discovery Series carries a certain collector's appeal, and limited Japanese releases have a habit of disappearing quickly and reappearing at multiples of their retail price. More importantly, this is a genuinely well-made whisky that offers something different from the Yoichi core range. It rewards attention and rewards patience — give it twenty minutes in the glass and it opens considerably.

I am scoring this 8.2 out of 10. It is a confident, well-structured single malt that demonstrates Yoichi's quality without relying on peat as a crutch. The price is steep but not unreasonable for a limited Japanese single malt at a respectable strength. If you are a serious collector of Japanese whisky, or simply someone who wants to understand what Yoichi is capable of beyond the smoke, this belongs on your shortlist.

Best Served

Neat, in a tulip glass, at room temperature. Give it time — fifteen to twenty minutes of air does this whisky genuine favours. A few drops of soft water will open the mid-palate further if you find the 47% carries any initial heat, but I found it remarkably approachable at full strength. This is a whisky built for slow, considered drinking — a dram for the armchair, not the cocktail shaker. If you are feeling adventurous, a Japanese-style Highball with quality soda water makes a surprisingly elegant serve, though I would try it neat first to appreciate the distillate in full.
