Redwood Empire Pipe Dream Bourbon landed on my radar the way most interesting American whiskeys do — through word of mouth and a bottle that refuses to blend into the shelf. At 45% ABV, it sits right at that sweet spot where you're getting enough proof to carry flavour without the burn chasing everything else away. For context, 45% is just a hair above the legal minimum of 40% for bourbon, and in my experience, that extra five percent makes a genuine difference in how a whiskey holds up in the glass.

This is a NAS (no age statement) bourbon, which I know puts some people off. But here's the thing — no age statement doesn't mean young. It means the distillery wants flexibility to blend barrels of different ages to hit a flavour profile rather than a number on the label. Some of the most consistent bourbons I've poured behind the bar have been NAS expressions, and Pipe Dream fits that mould. The distillery behind this one hasn't been publicly confirmed, which is more common than you'd think in American whiskey. This is a bourbon that works beautifully in an Old Fashioned. The 45% ABV means it'll stand up to dilution from the ice and the sweetness from the sugar without losing its identity. Two dashes of Angostura, a sugar cube, a fat orange peel — keep it simple and let the bourbon do the talking.
