Tasting Notes

Nose

Maple, ketchup, fresh wood shavings, milk chocolate.

Palate

Thick, chewy texture. Very warm on front palate, leads into very full flavor. Buttered toast fills out the mid palate, with some drying down at the finish.

Finish

Drying but balanced, with the buttered toast and wood shavings lingering alongside residual warmth.

There are bourbons that demand your attention, and then there are those that command it. Garrison Brothers Cowboy Bourbon 2023 falls squarely into the latter category — a Texas bourbon of such singular intensity that it reshapes one's expectations of what the spirit can achieve. At 140.9 proof, this is not a whiskey for the faint-hearted, yet it manages something rather remarkable: it never once feels punishing.

Appearance

In the glass, the Cowboy Bourbon presents a deep mahogany hue, strikingly reminiscent of root beer in both colour and viscosity. A few uneven, slow legs trace their way down the sides — indicative of the considerable weight this spirit carries. It is a handsome pour, one that signals richness before you have even raised the glass.

Nose

The nose is wonderfully idiosyncratic. Maple syrup arrives first, sweet and assured, followed by an unexpected note of ketchup — tangy, almost savoury — that lends a curious complexity. Fresh wood shavings provide a clean, resinous backbone, whilst milk chocolate rounds things out with a gentle, confectionery warmth. It is an unusual combination, yet it holds together with quiet confidence.

Palate

On the palate, the texture is immediately striking: thick, chewy, and almost oil-like in its density. The front palate is very warm — the proof makes itself known without apology — before giving way to an exceptionally full flavour profile. Buttered toast fills out the mid-palate beautifully, a rich and comforting note that anchors the experience. There is a gentle drying quality as it progresses towards the finish, lending structure to what might otherwise be an overwhelmingly rich affair.

Finish

The finish is drying but well-balanced, with the buttered toast and wood shavings lingering alongside a residual warmth that persists without overstaying its welcome. For a bourbon at this proof, the composure on the finish is genuinely impressive — there is no harshness, no burn that demands you reach for the water jug.

Verdict

I do not award a perfect score lightly. In fact, I approach the prospect with a degree of scepticism each time a bottle presents itself as a candidate. But Garrison Brothers Cowboy Bourbon 2023 has earned it. To present a spirit at 70.45% ABV with this level of cohesion — this completeness of flavour — is quite the feat of distillation and maturation. After at least six years in the unforgiving Texas heat, this bourbon emerges not merely intact but triumphant.

At $249.99, it is not an everyday purchase, nor should it be. This is a bourbon for occasions, for contemplation. I would drink it neat, without dilution, even at this formidable proof — and I suspect that says rather more than any numerical score. It will not be for everyone, but for those it speaks to, it will speak volumes.
