Palate
I really enjoyed this barrel strength Watershed bourbon finished in apple brandy barrels. It has a nice kick and sweetness to it, and is a lovely accompaniment to winter holiday times. It has lovely apple notes without it being overpowering. It is a bit of a liquid apple pie in a bottle of bourbon. Not overpowering, but you know it is there.rnrnIt is an easy sipper despite the high proof and spiciness because it is well balanced and has a slight sweetness that rounds up the flavors. I am impressed with the balance Watershed Distillery has accomplished and look forward to future releases.

126.1 proof, undisclosed mashbill, 6 year old finished in Watershed Distillerys own apple brandy casks, 750ml, around $90. Batch 003. Spicy and semi-sweet. Definitely some crispy apple notes, unsurprisingly, but not overwhelming. Like a mild liquid apple pie with warming spices. Medium complexity with matching finish, though a mild spiciness lingers on. Verdict
